Please, don't take into account the gamescom demo, it was a very early version of the game, where the priority was to make the game playable from beginning to end.
The vita version runs smoothly at 60fps and at native vita resolution. Very much effort has been put on that version so it's not inferior to the other console versions.
All us in BlitWorks are gamers, and so, we wouldn't like a game that forces us to choose between a good and smooth version for home console or an inferior, choppy, low framerate port for portabie consoles, so every bit of power from the vita hardware has been squezzed in order to make the vita version match the home console versions (apart from resolution of course), so don't worry, the gameplay on vita is great, and the OLED screen makes it even better, making the game vibrant colors really shine on the screen.
About the other two versions, the game has been rewritten from C# to C++ (one of the reasons why it took so long, if you were wondering), and there is no interpreter, jit, garbage collector or other system between the game code and the system stealing precious cpu power, so you can expect a smoother version, more steady framerate and zero choppiness in these versions.
